Fan Shell

Cultivated in the areas of Piura and Tacna, the fan shells are one of the many aquaculture products that Peru offers. Its scientific name is Argopecten purpuratos, a species that lives between 5 meters to 30 meters deep, under temperatures that vary between 13 ° and 28 ° C. It is characterized by a mollusk filtering 2 valves (two plates). It is currently exported in refrigerated or frozen presentations.

All the fan shells are processed and fed through an automatic IQF line with an isothermal treatment at 0 ° C. Crustaceans are quickly frozen at -25 ° C in less than 10 minutes and can be frozen to protect the integrity of the product for longer.
